Two Tone Meatloaf


The two tones are chicken meatloaf on top of old fashioned meatloaf with a layer of cheese to pull the dish together.



Ingredients:

  • 2 pounds raw ground chicken
  • 2 teaspoon poultry seasoning
  • 1 teaspoon sage
  • 1 teaspoon white pepper
  • 1/2 cup chopped red pepper
  • 1/4 cup chopped onion
  • 1 tablespoon chopped parsley
  • 1/2 cup bread crumbs
  • 1 egg
  • 2 pounds raw ground beef
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 egg
  • 1 teaspoon red pepper
  • 1/2 cup chopped onion
  • 1/2 cup bread crumbs
  • 2 teaspoon dried basil
  • 4 sliced sharp cheddar cheese

Method

Preheat oven to 350 degrees. Line a loaf pan with foil making sure some foil is overlapping pan. In one bowl add ground chicken, poultry seasoning, sage, white pepper, red pepper, 1/4 cup chopped onion, parsley, first half of bread crumbs and 1 egg, mix well and set aside. In another bowl add raw ground beef, black pepper, garlic powder, last egg, red pepper, bread crumbs, and basil and mix well. Place ground beef mixture in loaf pan. Place sliced cheese on top. Place ground chicken on top of cheese to seal. Bake for 30 to 60 minutes or until internal temperature registers 160 degrees. Let stand for 10 minutes before serving.

Notes: I made up this recipe because my grandson loves meatloaf and I wanted to make this special for them. This is good cold the next day with sliced sweet onion and pickle on a bed of leaf lettuce on bread or as a salad. This is my original.
