Ultimate Melting Pot Meatloaf

Four types of meat plus a variety of vegetables make this meatloaf extra moist and tender. Top with a red catsup or chili sauce.
Ingredients
- 1 large onion, chopped
- 1/2 bell pepper, chopped
- 2 stalks celery, chopped
- 1 lb ground hamburger
- 1 lb ground pork sausage
- 1 lb ground lamb
- 1 lb ground veal
- 3 large eggs
- 1/4 cup 2% milk
- 1/3 cup seasoned bread crumbs
- 3 slices of black bread or rye bread with crust, torn up
- 6 tbsp quick oatmeal rehydrated in
- 1/4 cup warm water
- 1/2 tsp seasoned salt or equivalent
- 1/4 tsp onion powder
- 1/4 tsp garlic salt
- 1/4 tsp celery seed
- 2 pinches chili powder
- 1/4 tsp salt (optional)
- 1/2 tsp ground pepper
- 1/8 tsp cayenne pepper or 1/2 tsp Tabasco sauce
- Catsup and/or sweet red chili sauce

Method
In small bowl rehydrate oatmeal in warm water for 5-10 minutes. In a large bowl whisk together eggs and milk, add torn bread slices and combine with hands until mixed well. Add chopped onion, bell pepper, celery, all meats and seasonings. Mix ingredients together well with hands, making sure meats are integrated with each other. Add oatmeal mixture, and mix thoroughly. Pack meatloaf mixture into a large covered glass casserole pan prepared with nonstick spray. Take care to make a dome when packing meat mixture. Cover dish and bake for 1 1/2 hours at 350 degrees. Remove from oven and remove lid. (Option, at this time you can remove some juices and oils from dish with a turkey baster.) Spread catsup and/or red chili sauce liberally over top of meatloaf. Return to oven uncovered and cook for 30 minutes. Remove and let stand 10 minutes before slicing into thick (1 inch or thicker) slices. Serve with side dish of mashed potatoes or rice.
Notes: Thick slices of this dish are best. Serve with additional red chili sauce if desired.
