Veal Marsala


Tender veal gets added interest from Marsala wine in this baked dish. Garlic, mushrooms and onion give it extra flavor.



Ingredients:

  • 1 1/2 lb. veal for scallopini  
  • 1/3 cup grated Parmesan cheese  
  • 1/4 cup margarine  
  • 1 cloves minced garlic  
  • 1 medium onion. chopped  
  • 12 fresh mushrooms, thinly sliced  
  • dash cayenne pepper  
  • 1/3 bouillon cube  
  • 1/4 cup hot water  
  • 1/4 Marsala wine

Method

Cut veal into 2 inch pieces and coat well with Parmesan. In some butter, saute garlic and veal over medium heat, a few pieces at a time, until golden brown on both sides, using rest of butter as needed. Set veal aside as they are browned. Discard garlic. In same butter, saute mushrooms and set aside and saute onion until golden. Add cayenne, bouillon cube and hot water, stirring until browned bits clinging to the pan. Add veal, onions and mushrooms and cook for 1 min. over hi heat. Place in 1 1/2 quart casserole. Bake at 400 for 15 min. Add Marsala and bake covered for 5 min.

Notes: Marsala makes a big difference
