Veggie Mash Meat Pie

All your favorites in on dish--meat loaf, roasted root vegetables and a creamy cheese sauce.
 

Ingredients

  • Shell:
  • 1 pound ground beef
  • 1/2 cup fresh bread crumbs
  • 1 Tbsp finely minced white onion
  • 2 + 1 dashes of Worchestershire sauce
  • Salt and pepper to taste
  • Filling:
  • 1 large russet potato, peeled and cubed
  • 1 small yam, peeled and cubed
  • 1 small parsnip, peeled and cubed
  • 1 small sweet potato, peeled and cubed
  • 1 cup rutabaga, peeled and cubed
  • 1 tsp salt
  • 1/4 tsp garlic salt
  • 1/4 tsp nutmeg
  • 2-3 Tbsp butter
  • 1/2 cup milk
  • Sauce:
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1 cup milk
  • 1/8 cup sharp cheddar cheese, shredded or cubed
  • 1/8 cup American cheese, shredded or cubed
  • Salt and pepper to taste
  • Garnish:
  • 1 large tomato
  • Parsley flakes

Method

Shell: Combine all ingredients as for a meatloaf, and place into a 9 inch glass pie pan, reserve 1 dash of Worchestershire sauce. Form meat to sides of pan, and dash surface with remaining Worchestershire sauce. Use a second 9 inch pie pan to sandwich shell by firmly setting it on top. Place sandwiched shell into a preheated 375 degree F oven for ten minutes. Remove shell from oven, leaving top pie pan on until filling is ready. Filling: Heat 4 qts salted water in a large pot to a roaring boil. Add rutabaga first, and boil for 10 minutes. Add potato, parsnip, sweet potato and yam, and boil for an additional 20 minutes. Remove from heat source, and drain. Add butter and spices. Mash vegetables coarsely in a large bowl with a hand masher. Add enough of the milk until the mixture reaches a creamy, but textured state. Fill precooked meat shell with veggie mash. Sauce: Combine flour and butter with a fork until a smooth paste forms. Scald milk in a sauce pan. Just as milk begins to boil add salt and pepper to taste. Stir constantly for 30 seconds. Reduce heat to a simmer, and add the cheese a little at a time, stirring constantly. When all of the added cheese has melted, remove from heat source and whisk until sauce thickens. Finishing Pie: Slice tomato into 1/8" thick slices. Halve slices, and arrange in a circular pattern on top of pie. Cover pan with foil, and bake at 350 degrees F for 20-25 minutes, removing foil during last 5-10 minutes. Remove pie from oven and drizzle sauce over top. Sprinkle with parsley flakes. Serve extra sauce on the side.
