Venison Casserole

Looking for a new recipe to use up that venison you have in the fridge? Try this casserole for dinner.
 

Ingredients

  • 1 lb ground venison
  • 1 stalk fresh broccoli
  • 1 8 oz package of white and wild rice
  • 1 egg, beaten
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste

Method

Brown venison in pan. Cut up broccoli in bite size pieces, and boil for 15 minutes. Prepare rice as indicated on package. After ingredients are done, mix together in 8 x 8 inch baking dish. Stir in beaten egg and 1/4 cup cheddar. Salt and pepper to taste. Cover with aluminum foil and bake at 350 degrees or until cheese and egg are cooked. Uncover and add other 1/4 cup cheddar. Bake until slightly browned. Serve hot.

 

Notes: Can substitute ground beef or turkey in place of venison.
