Vicki's Favorite Meatloaf

Cream of mushroom soup keeps this ground beef meatloaf moist and tender.
 

Ingredients

  • Meatloaf:
  • 4-5 pounds ground beef
  • 2 large onions, finely chopped
  • 12 slices light bread, finely chopped
  • 2 sleeves saltine crackers
  • 1/2-1 cup ketchup
  • 1/4-1/3 cup mustard
  • 1/3 cup brown sugar
  • 2 cans cream of mushroom soup
  • 2 large eggs
  • Garlic salt and black pepper to taste
  • Sauce:
  • 1/2-3/4 cup ketchup
  • 1/4-1/2 cup mustard
  • 1/4 cup brown sugar

Method

The day before, combine meatloaf ingredients then separate into two loaves in a large buffet pan. Cover with plastic wrap and place in refrigerator until ready to bake. When ready to cook, uncover and place in oven preheated to 350 degrees. Bake 1 1/2 hours or until firm. While cooking, pour excess grease from pan and add water every 30-45 minutes. During last 20 minutes, combine sauce ingredients and baste over top and sides of each loaf. Do not overcook as meatloaf will burn on top and sides.

 

Notes: Adjust for smaller portions. Please do not cover with foil as ingredients will react with the aluminum and cause discoloration in meatloaf.
