
New York steaks are marinated in olive oil, vodka, garlic, thyme, and shallots and then grilled. It is served with a bacon-butter mixture.
Mix the first five ingredients together well. Wrap in plastic wrap and twist to make a log. Refrigerate.
Combine the next 10 ingredients in a large ziplock back. Refrigerate at least 3 hours, but preferably for 2 days. The day you are ready to serve, remove butter from the refrigerator. Heat a gas grill to HIGH heat and oil generously. Remove steaks from the marinade, reserving marinade. Rub steaks with some more olive oil. Grill for 10-13 minutes, turning often. While steaks cook, combine marinade and beef stock in a saute pan. Place on the grill and cook for 7-8 minutes, or until mixture is thick and bubbly and can coat the back of a spoon. Let steaks rest for 5 minutes, then slice very thin and serve on a large platter, bistro style. Pour sauce over steaks and place 3 slices of the bacon-chive butter over steaks.

This dish goes great with crusty French bread and a nice garden salad.
This is a very quick and simple feast that tastes absolutely fantastic. If you do not have time to marinate the steaks for 2 days, marinate at least 3 hours.
