Yankee Bean Soup

Dry kidney and black beans are cooked in beef broth along with celery, onion, and canned tomatoes, seasoned with lemon juice and dried thyme.
 

Ingredients

  • 1/4 vegetable oil
  • 2 large onions chopped
  • 3 garlic cloves crushed
  • 6 whole (canned) tomatoes, chopped
  • 4 celery stalks sliced
  • 1 1/3 c. dry red kidney beans
  • 1 1/3 c. dry black beans
  • 1 tsp sugar
  • 1 Tbsp. lemon juice
  • 2 tsp. dried thyme
  • 5 pints (10 cups) beef stock or broth
  • Salt and pepper to taste

Method

Heat the oil in a saucepan. Add the onions and garlic; fry until onions are soft. Stir in remaining ingredients; bring to a boil. Reduce the heat to low; cover and simmer for 3 hours, or until beans are tender.
